The family-run farm covers an area of 15 hectares, producing 45.000 bottles a year.

Stefano Billi has planted new vineyards by selecting clones according to the different type of soil present in the property.

He decided to use modern and traditional techniques in particular for his red wines, he uses open barriques for the alcoholic fermentation,  a process that requires skill, attention and a lot of manual work!

Winemaking: Vinification of every single type of grape, Alcoholic fermentation in open top French oak barriques. Length of maceration: 20 days. Only natural yeast. Malolactic fermentation and ageing in the same barriques, that have been re closed after the end of the alcoholic fermentation process.

Aging: 18 months in barriques and then 12 months in the bottle. Hand-bottled, without filtration.

Color: bright ruby ​​red

Smell: Intense and complex with aromas of blackberry, blueberries and ripe cherry, mulberry, light toasted tones

Taste: tasty and balanced mouth, with a silky and elegant tannin. Long final

Food Matches: Red meat, steak, wild and game. Middle and mature cheese. Alone, just for pleasure!
